Vegan Mashed Potatoes
These Vegan Mashed Potatoes are a dairy-free version of the classic side dish. Creamy, fluffy, and super easy, made with pantry ingredients, no vegan butter needed!

Ingredients

Russet potatoes

tbsp
olive oil
1/4
cup
milk
2
garlic cloves
1/2
tsp
dill
1
tsp
salt
1/4
tsp
black pepper
Instructions
Peel potatoes.
Chop into the same size pieces, about 1" chunks.
Transfer in a large pot and fill with enough water to just cover the potatoes.
Bring to a boil and cook until soft, about 15 minutes.
Drain potatoes.
Add milk and olive oil.
Mash to desired consistency.
Season with salt and pepper.
If adding garlic, use fresh, minced or saute in oil until golden for more mellow, sweet flavor.
Garnish with dill.
Serve and enjoy.
