Made with plump and juicy tomatoes, fresh pepper and onion, this Pico de Gallo is delicious served with tortilla chips or in vegan tacos!

Ingredients
  

  • 3 medium Roma tomatoes
  • 1/2 cup pepper
  • 1/4 cup red onion
  • 1 tsp parsley
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp lime juice

Instructions
 

  • Dice the tomatoes, onion, and pepper into small squares.
  • Add to a large bowl.
  • Add parsley, salt, pepper, and lime juice.
  • Mix in a bowl.
  • Serve with chips or in a taco.
  • Enjoy!
