Made with plump and juicy tomatoes, fresh pepper and onion, this Pico de Gallo is delicious served with tortilla chips or in vegan tacos!
Every Tuesday, we make tacos. And this Pico de Gallo is a new addition! It’s so easy to make and perfect as a topping. This recipe is quick and easy, requiring only a few ingredients.

Ingredients:
- tomatoes: medium size Roma tomatoes
- pepper: jalapeno, serrano, or green bell
- onion: I used red onions, but white works as well
- limes: use the juice to enhance the flavors
- parsley
- seasoning: salt and pepper
How to make pico de gallo?
- Dice the tomatoes, pepper, and onion into small pieces.
- Place in a large bowl.
- Add lime juice, parsley, salt, and pepper. Stir everything together.
- Serve with chips or in a taco.
- Enjoy!
How to store pico de gallo?
Place the pico de gallo into an air-tight container and put it in the fridge. It will last up to five days.

- 3 medium Roma tomatoes
- 1/2 cup pepper
- 1/4 cup red onion
- 1 tsp parsley
- 1/2 tsp salt
- 1/2 tsp black pepper
- 2 tbsp lime juice
Instructions
- Dice the tomatoes, onion, and pepper into small squares.
- Add to a large bowl.
- Add parsley, salt, pepper, and lime juice.
- Mix in a bowl.
- Serve with chips or in a taco.
- Enjoy!
