These Vegan Granola Bars are energizing, healthy, and delicious! No baking needed, these bars are the perfect snack to make ahead and have throughout the week.
These granola bars are one of my favorite snacks for the week! Especially because they’re healthy and you can add whatever ingredients you want to spice up the flavor!
You can enjoy these bars with your breakfast, lunch, or just on its own as a snack! My Peanut Butter Energy Balls are a similar snack to this one, but bite-sized!
Ingredients:
- oats: I used old-fashioned rolled oats
- peanut butter: or any nut butter
- maple syrup: to combine ingredients so they stick together
- additions: you can add anything you want, but I used flax seeds, chocolate chips, coconut flakes, and sunflower kernels
How to make vegan granola bars?
- Melt peanut butter and maple syrup in the microwave, then mix well.
- Add the rest of the ingredients and stir until well combined.
- Add to pan and freeze in the refrigerator for an hour.
- Cut into bars and enjoy!
How to store vegan granola bars?
On a plate, stack the bars on top of each with parchment paper in between so they don’t stick together. Place in the fridge until ready to eat!

- 2 cups old-fashioned oats
- 3/4 cup peanut butter
- 1/3 cup maple syrup
- 1/2 tsp cinnamon
- 1/2 tsp salt
- 1/2 tbsp coconut flakes
- 1/2 tbsp chocolate chips
- 1/2 tbsp flax seeds
- 1/2 tbsp sunflower seeds
Instructions
- Melt the maple syrup and peanut butter in a bowl in the microwave for 25 seconds. Mix until combined.
- Add the rest of the ingredients and mix until combined.
- Line a pan with parchment paper and pour in the mixture.
- Place in the refrigerator and freeze for an hour.
- Cut into bars and enjoy!
