I am a BIG pasta fan. Spaghetti, alfredo-you name it! And especially now that it’s getting colder out, these kinds of dishes are one of my favorite parts of the day.
This alfredo sauce is so delicious and creamy. It’s pretty insane that this recipe is completely dairy-free. Cauliflower is the main ingredient for this sauce and it gives such a nice, almost nutty taste when cooked.

Ingredients:
- cauliflower: fresh florets, not frozen
- garlic: cloves, minced or roasted
- vegetable broth: or water from cooking the cauliflower
- plant-based milk: I used almond but any plant-based milk will work
- nutritional yeast: for a ‘cheesy’ flavor
- seasoning: salt and pepper
How to make vegan alfredo sauce:
- Cut cauliflower into florets and place in a large pot. Fill with water or vegetable broth. Cook until cauliflower is tender.
- Take cauliflower out and place on a baking sheet or in a bowl. Wait until slightly cooler.
- In a blender, add cauliflower, garlic, water, almond milk, nutritional yeast, and seasoning. Blend until smooth.
- Pour over noodles and enjoy!
Storing:
Pour leftover sauce into a jar with lid. Place in fridge for up to 4 days.

- Roughly four cups fresh cauliflower florets
- 2 tsps minced garlic
- 1/4 cup vegetable broth/water from cooking cauliflower
- 1/4 cup almond milk
- 1 tbsp nutritional yeast
- 1 tsp sea salt
- 1 tsp pepper
Instructions
- Wash and cut cauliflower into florets.
- Place in a large pot.
- Fill with water.
- Cook until cauliflower is tender.
- Take cauliflower out and place it on a baking sheet or in a bowl. Wait until cool.
- In a blender, add cauliflower, garlic, almond milk, water from cooking, nutritional yeast, and seasoning.
- Blend until smooth consistency.
- Pour over noodles and enjoy!
